Long before Pies by Zach became the buzz of Millbrook and the surrounding community, it began as something deeply personal: a hobby born out of healing and rediscovery. After nearly a decade working in corrections, Zach found himself facing a battle with stress, trauma, and a struggle to find joy in everyday life. It was during this difficult period that he turned back to something familiar: pizza. What started as a way to relax turned into an obsession, a creative outlet that helped him reclaim purpose. With little more than passion and determination, Zach and his father built a mobile pizza cart together; an early, hands-on act that laid the foundation for his business. They took that cart to pop-ups, markets, weddings, and community events, and slowly the pizzas he crafted from simple, fresh ingredients started finding loyal fans.

The Problem:

As his customer following grew, so did the challenges. Zach faced the common hurdles many small food businesses face: managing cash flow while investing in equipment, securing a reliable workspace, and navigating the shift from hobbyist to a sustainable business.

The Solution:

In 2024, Zach strengthened his business skills by joining our Starter Company Plus program. Through the program, he learned how to write a business plan, develop marketing strategies, and manage cash flow.

Upon program completion, Zach received a small grant to fund the purchase of a portable pizza trailer. And when he identified a suitable brick-and-mortar location, Community Futures Peterborough designed a flexible business expansion loan. This loan helped him grow from operating a handmade pizza cart at markets and pop-ups to launching a food trailer and now to opening a full-scale pizzeria in downtown Millbrook.



Implementation & Results:

Zach’s restaurant opening led to him hiring part-time staff members while he manages significant and growing demand for his pizzas.  He sells out nearly every day of the week – over 100 pies a day!
